Mexican Chili Casserole/AKA Fireside Chili/ AKA dinner the other night. Now I am just a college student, young wife, girl. Not quite Suzie Homemaker in case for some reason you might be under that impression. I mean we eat, I cook. Rick likes. That's about it. However, this is something I make- super EASY- that people usually LOVE. My mother never really taught up how to cook or do things like that. The martyr she wanted to do everything and then complain about having to do everything. Anyway, not important now. She did teach me how to make this-- however, I don't make it her way-- I make it MY way- and it seems to work well. Anway... here is the little ode to haha- the ode to Mexican Chili Casserole I promised someone... The scents of heat swarm from the kitchen to your room- I know it is just a matter of time before you walk in and say something smells unbelievable. I think you say that about everything even if it is burnt toast, but in this case I agree. The peppers, mixes just so well with seasonings and cheese- the chili below the staple and if we wren't out there'd be sour cream- but better that we're out- because its so fattening- Layer on melted layer the meat and beans and spice- its not the same as witht he chips on top the way you like- but I figured that's worse for you- so this will have to suffice- suffice- I know you love it- haha yipee yahoo--- Its midnight now, I'm starving- I' dont' kow about you. ok lame lame lame haha i know :P
